Your Mother Was Right – Eat Your Veggies!

Everyone knows that Mom’s are over worked, over stretched, tired and sometimes at the end of their energy rope. What better way to help increase her/your energy than with a healthy dose of greens! In the field of nutrition and wellness, green foods are well known for their health giving properties.




New research on vegetables and aging says again why your mother (YOU) was right! Eating vegetables keeps the brain sharp and may slow the mental decline often associated with aging. On measures of mental sharpness, older people who ate more than two servings of vegetables daily appeared five years younger at the end of the six year study than those who ate few or no vegetables. The study also found that people who ate lots of vegetables were more physically active, adding to evidence that “what’s good for your heart is good for your brain,” says neuroscientist Maria Carillo, director of medical and scientific relations for the Alzheimer’s Association.


So, Mom’s go ahead and indulge in that chocolate dipped strawberry from your kiddos, but try to fit in that vitamin rich kale salad and you’ll look and feel younger in the long run and be able to give more of yourself to your family and to your own pursuits of happiness via optimum health.

When I first joined the Books Family Health Center last family month, I knew i was home when, on my first day of “the job”, Dr. Books entered the office wearing her signature red sweater carrying a large bowl of green stuff. Kale! Yummy! A Phyllis smile and a lunch? Now, this is my kind of place. As a nutritionist and creator and CEO of “Innocent Chocolate” I have always had a passion for wise nutrition through delicious tasting food, so I was thrilled to be asked to compile a series of BFHC treasured recipes to create what will eventually become a cookbook. In the month’s to come, I will be sharing with you some highlights of what may be part of the book. This month’s feature is that famous “first day Books kale salad”. Use whatever amounts of each ingredient you like. It’s all up to your own taste buds. This recipe is gluten free and can be sugar free. Don’t add anymore salt as the tamari and lemon will make it taste salty enough.

Sesame Cranberry Kale Salad
  • Lightly toast 1/8 of cup of organic sesame seeds in a dry skillet just enough to lightly brown and to allow the oils to extract – don’t burn them! – set aside
  • Take two large bunches of organic kale and rinse in non-chlorinated, non-fluoridated water, if possible. Tear off the soft leafy part from the stem with your fingers into 1/4 inch strips – no knives – and place in a large mixing bowl
  • In a jar or glass, mix equal parts organic freshly squeezed lemon juice, cold pressed virgin olive oil, and low sodium Tamari. I use about 1/8 cup of each. If you have too much, keep it for the next salad!
  • Pour the liquid mixture over the kale and massage it in between your fingers and thumb. Don’t squeeze too hard.
  • Toss in the sesame seeds
  • Toss in 1/4 cup of dried organic cranberries (if you are following the BNT sugar elimination diet, use apple juice sweetened cranberries)
  • Toss in 1/4 cup of raw or roasted unsalted organic pumpkin seeds
  • Chill
  • for 2 hours
  • Serve to all those you cherish! Enjoy!
  • Note: Add organic blue cheese or feta for added protein.
